Hi Everyone! we would love to pass on this recipe from Jasmine at Lemon Canary for a delicious raw brownie recipe! We hope you enjoy it as much as we did. mmmmm.

Ingredients

BASE

  • 3 cups walnuts.
  • 20 dates (soaked in warm water for 10 minutes)
  • 1/2 raw cacao powder
  • 1/2 cup coconut
  • handful of cacao nibs
  • 2 tablespoons of coconut oil
  • pinch of Celtic sea salt

TOPPING

  • 150g raw cacao butter
  • 1 tablespoon cacao powder
  • 1/2 cup macadamia nuts
  • handful of goji berries

HOW TO MAKE:
I used a Thermomix to make mine but any food processor will do fine.

BASE –
Grind up 2 cups of walnuts fairly fine.
Add the raw cacao and sea salt, and mix again until combined.
Add the coconut oil and dates, and mix again.
Add the coconut, nibs and the rest of the walnuts, only mix lightly so that you have loads of crunch.
Press into the square or rectangular baking tin. Place in fridge.

TOPPING
Gently process the macadamia nuts and set aside.
Melt the cacao butter and the cacao powder in a small heatproof bowl over a pot of simmering water. (You can also do this on the Thermomix, 60 degrees, 4 minutes, speed 1).
Pour the melted chocolate over the top of the mixture into the tin.
Sprinkle with Macadamias and Goji Berries.

Please note – This makes quite a few slices. I always chop mine up, wrap them and pop them into little zip-lock bags in the freezer with the date. They keep for a few months and this means you always have something on hand for a hungry husband or kids.
